Karē or Japanese curry would come up as the top of our mind when we think of Japanese cuisine. It is commonly served in three main forms: curry rice, curry udon, and curry bread. However, in our case we bend it differently. As a salad maker we know that it would be a brilliant idea to serve our salad with this modern era Japanese national dish that we mix with carrot, onion, special prepared potato and last but not least add it up with our signature porch egg. ปลาเงินทอด (Shirauo Karage) หรือที่หลายคนขนานนามว่า โสมแห่งสายน้ำ เป็นปลาน้ำจืดที่มีลักษณะพิเศษ ตัวขาวใส ใช้ชีวิตในทะเลสาบที่เย็นจัด จึงเก็บสะสมสารอาหารเอาไว้ ซึ่งตัวปลาเงินนี้เป็นปลาที่มีโปรตีน แคลเซียม และธาตุเหล็กสูง เป็นแหล่งสะสมคุณค่าสารอาหาร เหมาะแก่การเป็นอาหารชั้นยอดบนโต๊ะอาหารญี่ปุ่นเลยทีเดียว

Shirauo ,as many people call it Ginseng of the River, is a freshwater fish with unique characteristics; tiny and clear. They live in a very cold lake, hence they accumulating all nutrients into their bodies, contain with high protein, calcium and iron. It is said that it was one of a top class food on a Japanese table.
With many reasons, Glean Salad has come up with a salad recipe to please all fans and those who are interested. We carefully fried one by one Shirauo through special techniques that keep them remain crispy, and delicious. Imagine that you have it together with our unique sesame dressing, which using honey, apple cider, and wasabi. This recipe has been specially created for the smoothness of salad and dressing in order to extract the unique rich in flavor. The combination of fresh salad vegetables, ebiko and grilled Eringi mushrooms together with Shirauo and dressings is really mellow that you will hardly forget.

ความวิจิตรพิสดารมักจะมาพร้อมกับความประณีต เพราะของที่วิจิตรงดงามต้องใช้ความประณีตในการรังสรรค์ เราใช้มะเขือเป็นวัตถุดิบหลักในการประดิษฐ์เมนูนี้ ซึ่งต้องใช้ความละเอียดอ่อนในการปรุงอาหารเพื่อรักษารสชาติของมะเขือไว้ ในขณะเดียวกันเราต้องเตรียมน้ำสลัดมิโซะในปริมาณที่เหมาะสมกับมะเขือ และทั้งสองส่วนต้องเตรียมให้เสร็จในเวลาเดียวกัน เราจึงจัดเตรียมความวิจิตรพิสดารในทุกกล่องอย่างพิถีพิถันในทุกขั้นตอนเพื่อสร้างความตื่นเต้นให้กับทุก ๆ คำของคุณ เราหวังเพียงว่า เมนูนี้จะไม่พิสดารเกินไปสำหรับคุณนะ

Complicatedness and delicateness always come together, because complicate things should be handle with delicateness. We have crafted this menu by using eggplant as our core ingredients which is very complicated to cook and prepare, in order to keep its original taste. At the same time we have created a combination of miso dressing and eggplant with the right amount in the right time as we know that this is the key for this dish. So, we delicately prepare “A box of complicatedness” in every steps to make sure this menu would give you a surprise in every bites. มะเขือม่วงอบมิโซะ

ศิลปะการประกอบอาหารตะวันออกมีลีลาและรสชาติที่เป็นเอกลักษณ์ เราจึงใช่อาหารตะวันออกเป็นส่วนสำคัญของเมนูนี้ ชาบู (しゃぶしゃぶ) เป็นสิ่งที่คนส่วนใหญ่นึกถึงหากพูดถึงสัญลักษณ์และกลิ่นอายของอาหารตะวันออก จึงเกิดเป็นหมูย่างชาบูในเมนูนี้นั่นเอง ยิ่งไปกว่านั้น เราได้ใช้มายองเนสน้ำจิ้มแจ่วรสเด็ด ซึ่งเป็นรสชาติพื้นฐานของชาวอีสาน เป็นน้ำสลัด เพื่อสร้างความตื่นเต้นให้กับผู้รับประทาน รสชาติของหมูย่างชาบูและมายองเนสน้ำจิ้มแจ่วเข้ากันเป็นอย่างมาก เราชอบสลัดเมนูนี้มากและเชื่อว่าคุณจะชอบมันเหมือนกัน

Oriental cuisine has such a unique taste and style, so our team would like to bring oriental as an essence for our menu. Shaba - Shabu(しゃぶしゃぶ) has been popped up in our mind as it is everyone’s favourite and could well represent the oriental scent. So, we come up with Shabu seasoning pork. We then create a spicy mayonnaise Jimjaew dressing which is base from Thai northeastern style taste to give such a twist for our menu. Surprisingly, it works out very well. Our team loves it and we believe that you will love it as well.

สลัดหมูย่างชาบูจิ้มแจ่วสไปซี่มาโย

ทุกครอบครัวมีสูตรลับด้านอาหาร เราเองก็มี ตั้งแต่ในยุคสงครามโลก คุณยายของเรามีสูตรน้ำพริกรสเด็ดสำหรับรับประทานกับยำกบ สูตรน้ำพริกนี้เป็นความลับมากกว่า 70 ปี เมื่อเวลาผ่านไป คนรุ่นใหม่ในครอบครัวใช้น้ำพริกนั้นในยำไก่ (เพราะคนกินกบน้อยลง) เราได้ลิ้มลองน้ำพริกนี้และติดใจในความอร่อย จึงเป็นที่มาของน้ำสลัดสไตล์ใหม่ จุดเด่นของเมนูนี้ คือ น้ำพริกรสแซ่บที่คลุกเคล้าอย่างเข้ากันกับผักนานาชนิดของเรา ได้เวลาลิ้มลองเมนูนี้และนั่งไทม์แมคชีนย้อยเวลาไปในยุค 40’s ด้วยกันแล้ว

Every family has their own secret recipes and so do we. One of our partner’s grandmother has an extraordinary chili sauce which use to eat with Thai style frog salad (Yum Gob). This sauce has been kept for 70 years to no one but the family members. When generation passes the sauce has been adapted to eat with chicken called “Yum Gai” (since less people eats frog). We have tried and thought that this is a very amazing sauce. So, we collaborate with our partner to come up with dressing for salad in our own style. For certain, highlight of this menu would be the spicy chili sauce dressing that is well mixed with our selection of vegetables. Please try it and let’s time machine back to 1940s together.

John Gerard was the first English botanist who wrote about Potato in his paper, while some people believed that John Hawking was the first one who introduce potato to the world. Well, we don't know for sure which John brought potato to us, nonetheless we are certain that potato is one of the most important crop of the world. Without potato, mankind wouldn’t come this far. For us potato is a very common crop, but could be very tasty if we know how to cook and what ingredients to mix with. We also add 3 kinds of mustard to make our dressing for this menu to make it even more special. Lastly, want this to be a memorable menu for both John who discover and introduce this crop to mankind. So, let’s enjoy this simple yet very delicious salad together.
